Diamonds Are A Girls Best Friend....(and a special discount code)

You have all heard the term "diamonds are a girls best friend."  Well how about diamonds on your Nikes?!  If you are like me, you love shoes and all things that sparkle!  A few weeks ago I came across this adorable little Etsy shop, Harriet and Hazel.  The shop owner uses Swarovski crystals to embellish or monogram anything and everything you can think of, but specializes in super cute Nike shoes!!  This week I felt like I pushed through my workouts with ease.... its probably because of the adorable shoes.  #shoesmakemesohappy

Sweet Potato Enchiladas

 They are calling for snow this weekend and I for one am always excited for a cozy weekend snow day!!  Relaxing days at home, however, can often equate to the feeling of "what can I snack on next!" This being said, I want to share with you one of my favorite recipes that will take way that urge to snack because it is filling, warm and a healthy alternative to  restaurant enchiladas with all the same great flavor.  Your entire family will love it and its fast and simple to prepare, so its sure not to interrupt your cuddle time on the couch ;) 
 
 
Sweet Potato Enchiladas
 
Sweet Potato, 1 extra large or 2 small
1 cup Shredded Cheddar Cheese
1/2 cup corn, drained
1/2 cup black beans, drained and rinsed
16-20oz can Enchilada Sauce, mild, medium or hot
8 small tortillas, whole wheat or low carb
Plain Greek Yogurt (optional)
1 Avocado, pitted and peeled (optional)
 
 
Peel, cook and mash sweet potatoes. Mix in 1/2 cup shredded cheddar cheese, corn and black beans. Evenly add 1 cup enchilada sauce to the bottom of baking dish, reserving another 1 cup for later. Evenly divide sweet potato mixture between 8 small tortilla shells. Roll up and place in pan. Top enchiladas with remaining sauce and ½ cup cheddar cheese. Bake at 350 for 20 minutes. Top with 2 tsp greek yogurt and ½ avocado, sliced.

A Step on the Wild Side

Cheetah and zebra and leopard- OH MY!  Every girl I know has a love affair with shoes (even if they don't like to admit it!)  The same thing goes for a great animal print.  Now take those two and pair them on a Nike Free running shoe.  I don't know about you, but I am out of this world obsessed!!

I purchased these shoes back in November and get compliments everywhere I go- seriously everywhere.  I even encountered a grown woman at the grocery store jump up and down in excitement as she asked where I got them :)

Although cute, these shoes are made for serious movement, whether you're in a group fitness class or hitting the cardio machines, or out shopping with your girlfriends, these sneakers offer a barefoot like feel for better performance and a natural range of motion.

One Pan Mexican Quinoa

Did you just get as excited about the words "one pan" as I did?!  This Mexican Quinoa recipe is easy, delicious, packed with protein, fiber and flavor and is the number one raved about meal amongst the clients I coach one-on-one for nutrition. The reason?  "Its so tasty, I would actually choose this over going out to a Mexican restaurant."
 
Serve it plain, in a taco shell or even throw in some cooked chicken.  Its perfect for your whole family!
 
Need an easy dinner recipe that will fuel your body?  Try this:


One Pan Mexican Quinoa

What you will need:
1 ripe avocado, halved, pitted and diced
1 can black beans, drained
1 can corn, drained
2 cloves garlic, minced
1 jalapeno, finely chopped
1 limed, juiced
1 can fire roasted tomatoes
1 cup vegetable broth
1 cup quinoa, uncooked
1 tsp chili powder
1 tsp olive oil
 
How to make:
1. Heat olive oil over medium heat, add garlic and jalapenos.  Cook until garlic is fragrant.
 
2. Stir in quinoa, vegetable broth, beans, tomatoes, corn and chili powder. 
 
3. Bring to a boil, reduce heat, cover and let simmer until quinoa is cooked- about 20 minutes.
 
4. Remove from heat. Stir in avocado and lime juice.
 
5. Serve warm.
